Ingredients:
– 2 large, over ripened bananas
– ⅓ cup coconut oil

– ½ tsp grated nutmeg
– ½ tsp ground cinnamon
– 1 tsp grated tonka bean

Instructions:
1. Preheat oven to 350F.
2. Line an 8×4 loaf tin with parchment paper.
3. Mash bananas and beat in coconut oil, eggs, and brown sugar until light.
4. Combine flour with salt, baking soda, nutmeg, cinnamon, and tonka.
5. Stir this into the banana mixture.
6. Remove about ½ cup batter and mix in cocoa powder.
7. Spoon batter into prepared pan and swirl the cocoa mixture into the banana mixture.
8. Bake for 50 minutes until cooked.

Ingredients:
For the dough:
– 1 tbs instant yeast
– ½ cup warm water
– ½ cup milk
– ¼ cup sugar
– ⅓ cup butter or shortening, melted
– 1 tsp salt
– 1 egg
– 3½ to 4 cups all-purpose flour
Filling:
– ½ cup melted butter
– ¾ cup sugar
– 2 tbs ground cinnamon
Glaze:
– 4 tbs butter
– 2 cups powdered sugar
– 1 tsp vanilla extract
– 3 to 6 tbs hot water
Instructions:
1. Heat oven to 350 degrees F.
2. Generously butter a 9×12 inch baking pan.
3. Mix yeast, milk, water, sugar, melted butter, salt, and egg in a large bowl.
4. Add 2 cups of flour and mix until smooth. Mix in remaining flour until the dough is easy to handle.
5. Knead the dough on a lightly floured surface for 5 to 10 minutes. Let it rise until doubled in size.
6. Roll out the dough into a rectangle, spread melted butter, sugar, and cinnamon.
7. Roll up the dough, cut into slices and place in the pan. Let it rise again.
8. Bake for 30 minutes until browned.
9. Mix butter, powdered sugar, and vanilla for the glaze. Spread onto rolls.

Pastry:

– 2 cups freshly grated coconut
– 2 cups sugar
– 1 tsp cinnamon
– 2 sticks clove
– ¼ tsp grated nutmeg
– ¼ cup water
– 1-2 drops pink food colouring
Assembly:
– 2 tbs melted butter
– 1 egg white
– 2 tbs granulated sugar
Instructions:
1. Mix all the filling ingredients in a saucepan and cook until thick.
2. Preheat oven to 375F.
3. Roll out the pastry, brush with melted butter, spread the coconut mixture, and roll up.
4. Brush with egg white, sprinkle with sugar, and bake for 45-50 minutes.
5. Slice and bake for a further 10 minutes.
